1. I use an iPod Touch to listen to music. Whenever I plug it in to the USB (#1 C or #2 2.5) it doesn't recognize it and I get this prompt; "To use Apple CarPlay, please enable it on your device". iPod Touch does not have Apple CarPlay, nor the option to enable it. Is there a workaround for this? Anyway for the Emira to simply recognize the iPod Touch as a USB media device?

2. How do I associate my new Emira with the Lotus Car app? I've tried a number of different ways with no success. I'm a bit lost here. (Android Auto interface).

3. How do I stop from smiling?

Congratulations!
Cannot help you with #1, but #2 there is no app connectivity with the Emira, it is not a supported car in the Lotus app; that app is mainly for their EV cars.
#3 - keep doing it.

You won't be able to use an iPod Touch by plugging it into a USB port.
You might be able to pair it via Bluetooth but then you will have to control the play of music by the iPod.
You can only use the two USB ports inside the centre console armrest to connect a suitable USB device.
The USB port forward of the lower storage tray is charging only.

You will have to put your music on a USB stick, I use one of those low profile micro types so that it doesn't foul the armrest lid. That said the Infotainment music playback on my car is poor. It doesn't remember what you were playing last or where you got to. I believe that has been fixed in a software update but I haven't got that yet and will have to wait until my service in June to confirm.

In the meantime I've put my music on my phone and play it via Bluetooth/Android Auto using the app Musicolet, which works well.
